Coleslaw Dressing

Don’t tell McGyver that I got this recipe from an ex-boyfriends grandmother.  We were visiting his family in Iowa and I had this dressing.  Grandma Phyllis served with cucumbers and onions, this time.  She said she used it for coleslaw, potato salad or anything else she felt like.  Well, I got to tell you, grandmas are pretty good in the recipe department.  If you want a good classic American recipe, I imagine some of the best come from those mid-western farmer/rancher wives. 

Don’t worry, the boyfriend was before McGyver and not current. Actually Mcgyver knows ex-boyfriend, actually McGyver knows the recipe came from said boyfriend’s grandma, actually I don’t keep secrets from McGyver.  So don’t worry about keeping any secrets, whew, the pressures off.  Now you can enjoy this dressing without any guilt. 

Ingredients

2 eggs

1 cup sugar

1/2 cup vinegar

1/2 cup water

2 cups (16 oz jar) Miracle Whip

1 Tbs mustard

1/2 and 1/2 or milk if needed

Directions

In a medium sized bowl, mix the eggs.

Add 1 cup sugar.

Then add 1/2 c water and 1/2 c vinegar.

Mix it all together.

Next add the 2 cups Miracle Whip, it add a nice sweet, creamy, tangy taste.

Add the 1 Tbs of mustard.  Good ol’ yellow mustard is perfect.

Mix’er up!  Here’s where you add some milk if it’s too thick, which may happen if you aren’t into measuring.

Pour it into a jar(s) and chill.

Umm, yeah, it fills more then a quart jar, so I like to use my empty Miracle Whip jar for the extra.  Here’s a helpful hint, if we go on a picnic or camping I travel with a bag of coleslaw mix and my jar of dressing in the Miracle Whip jar.  When I’m all done, the jar goes in the garbage.  My coleslaw is crispy and fresh, and perfect!

Speaking of coleslaw, you can cut up your cabbage and all, but I like the bagged stuff, it’s just the right amount and a lot less work.  Tear open the bag, throw the mix in the bowl, pour some dressing over it and mix well.  You will have dressing left over, the dressing mix is good for about 5 quarts of salad.

Carrot Salad

What you’ll need:

Coleslaw dressing

1 bag of matchstick carrots (trust me this is the easy way)

1/2 cup orange flavored craisons

1/3 cup honey roasted walnuts or pecans

Layer them in a bowl or mix it all up, it’s your choice.  Hey, I think this is almost good for you too.   Veggies, fruit, nuts and Miracle Whip.  Yup, got all makings of something healthy!  Shoot you could even use Miracle Whip Light and take it to a whole ‘nother healthy level.
